Comercialització i viabilitat d’un projecte

[cat] La evolució de la oferta gastronòmica presenta una dinàmica de creixement sostingut important en els darrers anys. El concepte de restaurant de qualitat ha anat canviant en els darrers anys, des del restaurant clàssic on es menjava molt bé fins al concepte actual on el menjar simplement és part de l’experiència completa, formada també, per altres components com per exemple l’estètica del local. El present treball té com a finalitat l’anàlisi, la comercialització i la viabilitat d’un restaurant concret com és el Celler de Randa. Tenint en compte les seves característiques pròpies i la meva proposta personal per implementar, es calcularà la rendibilitat en el millor del cassos, en el pitjor del cassos i en un escenari mitjà.

[eng] The evolution of the gastronomic supply is suffering sustained growth in the last years. The meaning of a high quality restaurant has changed in the last years, from the classical restaurant where the guest used to eat well, to the concept of restaurant where the food is only a part of the whole experience. The objective of the actual project is the analysis, commercialization and viability from a specific restaurant, such as “Celler de Randa”. Taking into account their characteristics and my personal proposal, the profitability will be calculated in the best scenario, in the worst and in an average scenario.
